Wine Tasting NotesLucien Thomas produces his "basic" St-Veran wines from 40-50 year-old vines of Chardonnay planted on a remarkable, 16-hectare single-block south-west facing vineyard. This privileged, very sunny and heat-retaining location allows the grapes to attain perfect ripeness and concentrated flavors. The soil is a stony, fast-draining mix of limestone and clay.
Lucien plows his vineyards, prunes severely, and uses organic fertilizer only if needed. He further controls yields by cluster-thinning and green harvesting. After hand-harvesting, grapes are gently pressed and the juice is allowed to clarify in tank at low temperature to become as clear as possible before alcoholic fermentation kicks off with native yeast.
The wine is vinified and aged solely in stainless steel tanks on its fine lees for 7 months. The Domaine Thomas Saint-Veran Tradition Chardonnay offers ripe and energetic green apple, mineral and citrus flavors with a long and bright finish. Focus, clarity and intensity of fruit are the hallmark of Lucien's wines.
